110g coconut flour
55g butter

1 egg, beaten

1 handful of raisins

Directions
Preheat the oven to 375F/190C.
Prepare the apple as stated above and place in a small, thick-bottomed sauce pan and put to one side.
Sift the coconut flour into a cooled mixing bowl, holding the sieve high to allow lots of air in.

Add in the butter and, using a knife, cut the mixture until it resembles breadcrumbs.
Use your hands to rub the mixture, holding it high and letting it drop to allow further air in. Do this until it starts to stick together as dough. Then add the honey and knead in for a couple of minutes until the dough sticks together enough to roll out.

Dust a surface with coconut flour. Divide the mixture into four.
Very carefully roll out one of the quarters into a circle, about 2-5 mm thick, and push into a mini pie dish. Trim any excess.

Prick the base of the dough with a fork, and coat the bottom and sides with beaten egg.
Do the same with a second quarter of the dough in a second pie dish and place the two dishes on a sturdy baking tray in the middle of the oven.

Bake for 5 minutes.
While the bases are pre-baking, put the pan with the apple in over a medium high heat, add in the honey, cinnamon and raisins and simmer gently whilst stirring, until the apples have started to soften.
Take the bases out of the oven and fill each one with half of the apple mixture.
On your coconut-dusted surface, gently roll out each of the remaining dough quarters into circles of thickness 2-5mm. These are the lids for your pies.

Carefully transfer them onto the top of each pie.
Gently press down the edges and trim any excess. Using a sharp knife, make two small cuts in the top of each pie to allow any steam to exit whilst cooking. Coat each pie lid with beaten egg.
Still on the sturdy baking tray in the middle of the oven, bake the pies for 10-12 minutes or until the top has turned golden brown.
