Blueberry paleo muffins

Ingredients:

2 c. fresh blueberries
2 eggs
2 c. flour
1 c. sugar
1/2 c. milk
1/4 c. butter
2 tsp baking powder
1 tsp vanilla
1/2 tsp salt

Steps:
Heat your oven in prior to 350F.
Grease a muffin pan and set aside.
In large bowl combine butter, eggs, salt and sugar.
In small bowl combine baking powder and flour.
Stir into butter mixture, alternating with milk, until just combined and still lumpy. Be careful not to over mix.
Add vanilla until just combined, and fold in blueberries.
Fill each muffin pan about 2/3 of the way full.
Bake for 20-25 minutes or until browned, and a toothpick inserted into the center of a muffin comes out clean.











Pineapple Muffins
These are a lusciously sweet treat that binds the ordinary pleasantness of a pineapple fruit into a delicious, easy, and sweet snack.  You can enjoy these particular paleo muffins at any time of the day. You will definitely enjoy.

Ingredients:

8 oz crushed pineapple, including juice
2 eggs, beaten
2 c. flour
1 3/4 c. sugar
1/2 c. applesauce
2 tsp vanilla extract
1 tsp lemon extract
1/2 tsp baking soda
1/2 tsp salt

Steps:
Preheat oven to 325 degrees F.
Grease muffin tin and set aside.
In large mixing bowl combine flour, sugar, baking soda, and salt.
In another egg combine eggs, applesauce, pineapple and juice, vanilla extract, and lemon extract.
Add wet ingredients to dry ingredients, and combine until just moistened.
Fill muffin tins 2/3 of the way full. Bake for 20 minutes or until center springs back when touched.
 

Cinnamon Muffins


Ingredients:
2 eggs
3 c. flour
1 c. milk
1 c. sugar
5 Tbsp butter
5 Tbsp shortening
3 Tbsp baking powder
1 tsp salt
1/2 tsp nutmeg
1 c. melted butter
1 c. sugar
1 Tbsp cinnamon

Steps:
Preheat oven to 350 degrees F.
Grease 12 three-inch muffin pan cups.
In large bowl combine butter, shortening and 1 c. sugar. Cream until smooth. Beat in eggs, salt, nutmeg, and baking powder.
Slowly stir in flour and milk alternately until mixture is just combined, and still lumpy.
Fill muffin cups to the top, and bake for 20 minutes.
Cool for 10-15 minutes.
In small bowl combine 1 c. sugar and 1 Tbsp. cinnamon.
Brush each muffin with melted butter and top with cinnamon sugar.
